Smokey Vegan Chipotle Sauce

This sauce is a staple in my house, its a great addition to so many recipes and is really versitle.



* serving suggestion; carrot fries and crispy roasted potatoes


Ingredients:


1 cup of raw cashews, soaked for 30 minutes in hot water

2 TBSP olive oil

1 lime – juiced

1 TBSP smokey paprika

1 large clove of garlic

¼ cup water for blending

Salt to taste

Fresh or dried chilli to taste


Method:


In a high-power blender (I use a nutribullet) add your soaked cashews, olive oil, lime juice, smokey paprika, garlic, salt, chilli and water. Tip: start with half the amount of water and add in small increments to get a creamy consistency, too much water and it will be too runny.

Blend until silky smooth.
